I know!  I know!   Real men don't eat Quiche...  Well, let me tell you that real men DO eat Quiche.. when it's manly!  There are several of these "egg pies" that my guys can't get enough of.  Here's one of their favorites.

First, brown sausage.  You can use either bulk Italian or breakfast sausage OR even links if you prefer.

While sausage browns, peel and slice one apple - I prefer Granny Smith, but any tart, firm apple will do.

I will use the apple raw and sliced in thin slices.  But, you can also shred the apple (for a more subtle taste and texture) or slice and then saute for a more carmelized and soft result.

I often use a pre-made pie crust for my quiches.  It speeds things up for dinner and saves me effort!  But, of course, if you have time, home made is best.  :)

Add another layer of 1/2 of browned and drained sausage

Add 1/2 of shredded Cheddar, then repeat the 3 layers with other half of apples, sausage and cheese.

Add 1 1/2 cups half and half (or milk or heavy cream or a mixture of all), 1 Tablespoon Sugar, 1/4 teaspoon Red Pepper Flakes and Salt and Pepper.  Whisk well.

Pour egg mixture over apple, sausage and cheese layers.

Bake at 425 degrees for 20 minutes.  Reduce heat and bake another 30-40 minutes, until knife inserted into center comes out clean.  Let sit 5-10 minutes before serving.  Refrigerate leftovers.

Recipe:

1 (9") pie crust, unbaked

1/2 pound bulk sausage (or link)

1 Apple, peeled and Sliced

1 cup Shredded Cheddar

4 Eggs

1 1/2 Cups Half and Half

1 TB Sugar

1/4 tsp Red Pepper Flakes

1/4 tsp Salt

1/8 tsp Pepper

Directions:

Brown Sausage, drain.  Peel and thin slice apple.  Layer apple, sausage and cheese in pie shell. 

Whisk eggs, half and half, sugar, Red Pepper flakes and salt and pepper.  Pour over sausage and apple in pie shell.

Bake at 425 degrees F for 20 minutes.  Reduce heat to 350 and bake another 40-50 minutes until knife inserted in center comes out clean.  Let stand 5-10 minutes before cutting.  Refrigerate leftovers.
